Just looked at the clock and it's time I left. Am doing a hygiene course tomorrow so that I can serve teas in the kitchen I've been using for the last 15 years for the church. Haz - I know - I appreciate why we have to do it but I already hold a pack holiday license that includes kitchen hygiene & all we seem to do today is duplicate things. MrPres. Be careful! I once broke a toe on the base of a settee! It was VERY painful. I reset it myself and strapped it up (having just finished a 1st Aid course, not knowing I'd be my own first patient) and went to the hospital the next day. Everyone - the trouble with diners is that they emply teenagers, pay them peanuts and treat them like sh*t. It's not the kids' fault, but the employers. I know this, 'cos my daughter has waitressed and barmaided under severely difficult to remain friendly and smiling circumstances, as have many of her friends. They're students all ... One thing I would say to clients in diners, restaurants, pubs etc. Be aware that one day the waiter/ess you are being rude to (if you get a kick out of that sort of thing) may one day we the lawyer/brain surgeon/nurse that you need to rely on.

jojo - unless the fish is fresh off of the boat, be sure you soak it in buttermilk (i knoiw it's not kosher) to remove some of the fishy taste. i do this to my salmon when i can't get it fresh...i lived in the carribean and ate fish everyday (and not all of it was fresh catch of the day)...of course the mistress is the pro chef...i'm just her humble servant...8)

1 cup white wine
1/2 cup olive oil
2 tablespoons Chinese Oyster sauce
1/2 cup soy sauce
2 cloves garlic, chopped
2 tablespoons ginger, chopped
2 teaspoons chilli, chopped
1 onion, chopped
Salt and pepper
maridate overnight. cook in hot oven for 10 minutes then serve on rice with green scallion & nuts ontop
