I've seen kitchen plans with work surfaces specific to task - chopping blocks, kneading boards (one wood and one stone) and a marble slab for working candy (obviously these people spend a LOT of time in the kitchen), but the articles always mention that you want them easy to lift so they can be replaced without a complete replacement of counter tops.

At first I don't even look at the tile stats - I just type what I see as quickly as I can find them
