OK here's another idea--a frittata. Dice up miscellaneous filling stiff you have around--bits of ham, precooked veggies, leftover boiled potatoes, etc. Toss in some olive oil in a 12 inch skillet till warmed through. If you like, add some onions. When it's cooked through, pour on 6 eggs, beaten. Sprinkle on parmigiano cheese over the top. Cook on the stovetop for a few minutes till the bottom is just starting to brown but the topis still liquid. Then run it under the broiler till the top is golden brown and delicious. Cut into pie shaped wedges and serve.
