Skillet Corn Cakes with Heirloom Tomato Salad
Recipe by Chef Ted Iwachiw, Ted’s on Main, Medford

Ingredients for Skillet Cakes
4 ears fresh corn, shucked, silks removed
1¼ cup buttermilk
1 large egg
2 Tbl melted butter
¾ cup cornmeal
1 cup unbleached all purpose flour
¼ tsp baking soda
1 ½ tsp baking powder
½ tsp sugar
Salt and pepper to taste
¼ cup finely sliced scallions
1 Tbl minced fresh parsley
3 Tbl vegetable oil

Instructions
Cut the kernels off the corn cobs with a sharp knife. You will need approximately 2 cups of uncooked kernels for this recipe. Place the kernels in a food processor and add the buttermilk, egg and butter. Process until the mixture is smooth.

Place the cornmeal, flour, baking soda and powder, salt, pepper and sugar in a large bowl and whisk to combine. Add the scallions and parsley and mix again.

Heat the large skillet, preferably nonstick, over medium heat. When hot, add half of the oil. Drop generous tablespoons of corn batter into the pan and cook until the cakes turn golden brown on the underside and bubbles appear on top side. Flip the cakes and continue cooking until they’re lightly browned. Reduce the heat to medium if the corn cakes are browning too quickly. Repeat with remaining oil and batter.

Heirloom Tomato Salad
2 large ripe heirloom tomatoes
2 Tbl chiffonade basil leaves
1 Tbl basil oil

Cut tomatoes in chunks, toss with basil leaves and oil. Spoon over corn cakes.

I ag4/6ized long and hard over the grid and now I am close to the fe 4/7 of finishing grid. So it daw4/8 on me that I have the rest of the day to get my last word so no need to panic. In the mean time, here is a story of clues. I had a very co 4/5 Christmas this year. I celebrated with 17 people and 6 dr 5/12ing dogs with dr 5/14y ears. 6 dogs and 17 people under one ro 4/7 can be quite chaotic! My brother ow 4/8 2 dogs. My sisters each have one. Pl 4/6 my parents have one and I have one. The dogs would pl 4/6 themselves down and fo4/7ishly fo 5/20ed their eyes on the floor waiting for food to dr 4/6. And as fa 4/7 would have it, they would get a nibble every so often. When there wasn't food to be had they would gn 4/10 on their rawhides Santa got for them. We often let them lo 5/10 outside to run off all their energy. My po 4/5 dad had to clean up a lot of dog po 4/6 outside. Of course with that many dogs, some got ar 5/12d and tried to pr 9/78 with each other. The adults played many games yesterday which consisted of Ping Po 4/7 and Po 4/5. Sometimes I would think "Oh Lo 4/5 take me away!" and I would escape to my lo 4/7 to escape all the chaos. I suppo4/5 I should go be sociable. I did not pr 5/18 read my story so there may be some mistakes. Po 4/8!

I ag4/6ized long and hard over the grid and now I am close to the fe4/7 of finishing puzzle.So it daw4/8 on me that I have the rest of the day to get last word so no need to panic.In the mean time, here is a story of clues. I had a co 4/5 Christmas this year. I celebrated with 17 people and 6 dr5/12ing dogs w/dr5/14y ears. 6 dogs and 17 people under one ro 4/7 can be quite a challenge! My brother ow 4/8 2 dogs. My sisters each have one. Pl4/6 my parents have one and I have one. The dogs would pl 4/6 themselves down & fo4/7ishly fo 5/20ed their eyes on the floor waiting for food to dr 4/6. And as fa 4/7 would have it, they would get a nibble every so often. When there was not food to be had they would gn 4/10 on their rawhides. We often let them lo 5/10 outside to run off all their energy in the sn 4/8. My po 4/5 father had a lot of po 4/6 to sc 5/14 outside. Of course w/that many dogs, some got aro 5/12d and tried to pr 9/78 with each other. The dogs often got in the way of people.If you got up,you would return to a dog that had sn 4/6ged your spot & taken your se 4/4 on the so 4/7. While dogs had fun, the adults had fun as well.Adults played many games yesterday which consisted of Ping Po 4/7 and Po 4/5. Sometimes I'd think "Oh Lo 4/5 take me away!" and I would escape to my upstairs lo 4/7 to escape all the chaos. I suppo4/5 I should go be sociable. I did not pr 5/18 read my story of clues so there might be several mistakes. I will be back later to help w/clues. Po 4/8!
