TIPSY CAKE
CAKE:
5 eggs, separated
1 c. sugar
1 c. sifted all-purpose flour
1/2 tsp. baking powder
1 tbsp. grated lemon rind
GLAZE:
1/2 c. sugar
1/2 c. cream sherry or brandy
2 tbsp. sugar
2 tbsp. cinnamon
CAKE: Beat egg yolks until thick, then slowly add 1 cup sugar, beating until mixture is fluffy. Sift the flour and baking powder over egg yolk mixture and stir until just blended. Fold in lemon rind. Beat egg whites until stiff; gently fold yolk mixture into whites. Pour into greased tube pan. Bake 30 to 35 minutes. Cool in pan for 10 minutes, then turn out on cake plate and add glaze.
GLAZE: Combine 1/2 cup sugar and sherry, bring to a boil and cook until thickened, about 4 minutes. Pour syrup over cake. Mix remaining sugar and cinnamon. When glaze has cooled, place a lace paper doiley over top, sprinkle with cinnamon sugar. Remove doiley.

ruru - teaching here in UK has been pretty unrewarding for some years now. Not talking about the money, but the rules, restrictions, goals set. None of them benefit the kids or the teachers. A lot of my contemporaries did go into teaching, some are school heads now and many more have left the profession in recent years. My children's contemporaries have also tried this path and most have left.
