I love lemon in pastry, too, TO, and often put it in the pastry for my mince pies. I also drop a small ball of marzipan (almond paste) into the base under the mincemeat. However, they don't keep well in a tin unless you line it with baking parchment or some kind of greaseproof paper. The lemon reacts with the metal otherwise.
