I don't think anyone was trying to make fun or be demeaning. I know two people who are dyslexic and they make fun of it all the time. Having a sense of humor about life is a valuable too.

You are probably right, Molly, but as the mother there wasn't much to laugh at at the time. My son told me lately that he is glad now because dyslexics are good at solving problems and that is what he does for a living--in the IT department.

They are very smart usually. It was like that for my son too. They were just realizing this was the problem, not lack of attention or goofing off. He had a few teachers who saw the problem. He was the first child in his school to have a laptop in class. It was not a laptop as we know them now but the spell checker was a big help plus for some reason it helped him express himself better.

They are frequently made fun of, bullied in school. Many parents don't want their child lsabelled because of the problems that can bring. Kids don't want to be singled out to receive the help they need. I was in special ed since the early 60s and, unfortunately, this has always been a problem in getting the kids the help that they need to receive

was just reading the chog -- there is an eye condition involving muscular control that exhibits some of the same symptoms as dyslexia. People cannot track across a page and keep losing their place while trying to read, mixing up columns when trying to add , subtract, multiply or divide, transposing letters when writing. Fortunately it is easly cured with a period of regular eye exercises (easily diagnosed too, when you know what to look for!)

My son is 37 now so it was a while ago and I don't remember exactly what we did but they were tracking exercises. We found an optometrist who was endeavoring to help these children.

yes -- that's what happened to us too -- all 3 kids! Had to suspend one of those red white and blue rubber balls at eye level and have them try to track it swinging back and forth in various directions while keeping their heads absolutely still.

Though I mostly lurk, I couldn't resist leaping into a discussion of cooking. Don't waste chicken breasts on soup-there's more flavour for that in the dark meat and bones. For the breasts, saute some chopped onions and garlic. Add whatever other veg you like (mushrooms, leeks, celery, tomatoes, peppers). When they've softened, add some tomato sauce (optional), water, white wine-just enough to barely cover the breasts which you now add to cover the veg in a single layer. cover tightly and simmer till the chicken is done, probably about 30 min. This iss essentially poaching, but more flavoourful than using just water. Bon appetit!

Thanks, Sammysmom. It's very adaptble, too. for pseudo-French, leave out the garlic and tomato sauce, using just mushrooms, leeks & white wine. For pseudo-cacciatore, use just onions, garlic, and mushrooms. Substitute some tomatoe paste for the sauce & thin with white wine (and a little brandy, if you feel like it). For pseudo-Chinese, leave off the tomatoes altogether, bot sauce and veg. Substitute soy sauce to taste for the tomato sauce, rice wine, if you have it for white wine, and add just a touch of sesame oil. For pseudo-Hungarian, leave off the garlic and all other veg except tomatoes and peppers. Stir in LOTS of paprika, use water only, no wine. Enjoy!

Hi, Molly! You're right about the frozen veg, but the recipes i was outlining will cook in 1/2-3/4 hrs. And TO, maany people don't like dark meat. Those recipes work very well with chicken breasts.

I think that if tried and true recipes don't work, it may be that the person writing out the recipe may have omitted some key steps that seem second nature, so actually, the recipe is more of a guideline than a true recipe. For example, in the Hungarian preparation below, you don't have to tell a Hungarian cook that lots of paprika means 2-3 tbsp if it's actually measured out, or that the paprika has to be added to a dry pan to coat the veg, and that the water only comes later. This isn't really technique, but rather just knowledge handed down from one cook to another. Technique certainly makes a cook's life easier, but I don't know that I'd call this sort of knowledge technique.

Sorry, TO, but I have no crock pot recipes. It's one area of cooking that I've never explored. My niece, a college junior recently acqured a slow cooker. I foound a great cookbook for her put out by Cook's Illustrated that describes all sorts of techniques for not turning your food into mush. I'll try to find the link, if you'd like.

Slow cooker recipes are good if you use tougher cuts of meat that need to tenderize over time, and fresh vegetables. Putting a fast cooking meat like chicken in a slow cooker for six hours or more will give you mushy meat. Same goes for frozen vegetables that only require a short cooking time.
