It is hard to know, even as a doc, if gluten-free is medically necessary for some folks. Some people have proven celiac disease but other people follow gluten-free diets and may not need to but say they feel better. Who knows? What probably should not be processed. And the wheat industry tosses toxic chemicals on what too.
